Ingredients

  • 1/3 cup low-sodium chicken broth, divided
  • 1 1/2 teaspoons cornstarch
  • 2 teaspoons lime zest
  • 1/3 cup fresh lime juice
  • 1/4 cup honey
  • 1 tablespoon soy sauce
  • 4 chicken breasts, boneless and skinless
  • salt, to taste
  • freshly ground black pepper, to taste
  • 1 1/2 tablespoons olive oil
  • 1 1/2 tablespoons butter
  • 2 cloves garlic, minced
  • cooked coconut rice, optional, for serving

Directions

Step 1 –Pour 1 tablespoon of the chicken broth into a small bowl.

Step 2 –Add in the cornstarch using a whisk.

Step 3 –Pour in the remaining chicken broth, as well as the lime zest, lime juice, honey, and soy sauce.

Step 4 –Mix to blend the mixture with a whisk, and set it aside.

Step 5 –Use a meat tenderizer to pound the thicker parts of chicken to an even thickness.

Step 6 –Season each side of the chicken with salt and pepper.

Step 7 –Heat up the olive oil in a large skillet over a medium-high heat.

Step 8 –Cook the chicken until golden brown and cooked through, about 5-6 minutes.

Step 9 –Transfer the chicken to a plate and cover with aluminum foil to keep it warm.

Step 10 –Melt the butter into the same skillet on a medium heat.

Step 11 –Saute the garlic until it is golden and fragrant, around 30 seconds.

Step 12 –Mix the lime juice mixture with a whisk and pour it into the skillet, cooking and stirring until the mixture has reduced slightly, about 2 minutes.

Step 13 –Return the chicken to the skillet, and spoon sauce over the chicken.

Step 14 –Serve over coconut rice!
