Ingredients

For the shortbread crust:

  • 8 tablespoons butter, melted
  • 1 1/4 cups almond flour
  • 2 tablespoons confectioners’ Monk fruit sweetener

For the lemon cheesecake:

  • 2 (8-ounce) blocks cream cheese, room temperature
  • 1 egg
  • 1 egg yolk
  • 1/2 cup confectioners’ Monk fruit sweetener
  • 2 teaspoons vanilla extract
  • 2 tablespoons lemon zest
  • 3 tablespoons lemon juice

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –Line an 8×8-inch baking pan with parchment paper or aluminum foil and lightly spray it with cooking spray.

Step 3 –In a bowl, combine the melted butter, the almond flour, and 2 tablespoons of the Monk fruit sweetener, mixing well.

Step 4 –Pat the crust into the prepared pan.

Step 5 –Bake until the crust is lightly set and beginning to brown slightly, about 6-7 minutes.

Step 6 –Allow the crust to cool completely before adding the cheesecake layer.

Step 7 –Combine the cream cheese, the egg, the egg yolk, the remaining sweetener, the vanilla, the zest, and the lemon juice in a bowl and beat with an electric mixer until it is well combined.

Step 8 –Evenly spread the cheesecake filling over the cooled crust.

Step 9 –Bake until a toothpick placed in the center of the cheesecake comes out clean, about 25-30 minutes.

Step 10 –Slice and serve.
