This Sleepover Breakfast Casserole will fill you up with salty ham, fluffy eggs, and melty cheese as you laugh about all the crazy things that happened the night before. Oh, and don’t forget the bottom layer of warm and savory English muffins. It’s sure to load you up and help you take that nap you’re gonna be needing soon since you barely got any shuteye. Sleepover Breakfast Casserole is the ultimate way to end an epic night of partying!
Ingredients
- 3 medium English muffins, split
- 12 large eggs
- 2 cups milk
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/4 teaspoon ground mustard
- 1 pound cooked ham, diced
- 1 1/2 cups cheddar cheese, shredded, divided
- 1/4 cup green onions, chopped
Directions
Step 1 –Coat a 9×13-inch baking dish with cooking spray.
Step 2 –Arrange the English muffin halves in a single layer in the bottom of the baking dish.
Step 3 –Whisk the eggs, the milk, the salt, the pepper, the garlic powder, the onion powder, and the ground mustard together in a bowl until well-combined.
Step 4 –Pour the egg mixture over the English muffins in the baking dish.
Step 5 –Sprinkle the chopped ham and 1 cup of the cheddar cheese on top of the egg mixture.
Step 6 –Cover the dish with foil and refrigerate overnight.
Step 7 –Preheat the oven to 400 degrees F.
Step 8 –Bake the casserole until the eggs are set, about 30-35 minutes.
Step 9 –Sprinkle the casserole with the remaining cheddar cheese and the chopped green onions.
Step 10 –Serve.
