Slow Cooker Carnitas is the recipe for the taco night of your dreams! Top your tortillas with the tender, seasoned pork, and add your favorite veggies for a refreshing crunch! Slow Cooker Carnitas will become a staple for Taco Tuesday, or any night when you’re in the mood for some robust Mexican flavors!
Ingredients
For the pork:
- 1 1/2-2 pounds pork tenderloins
- 1 medium onion, sliced
- 1 jalapeño pepper, seeded and sliced
- 4 slices orange rind, optional
- 1 (12-ounce) cans cola soda
- salt, to taste
- pepper, to taste
- 16 taco-sized flour or corn tortillas
Optional, for serving:
- avocado, to taste, chopped
- onions, to taste, chopped
- jalapeños, to taste, sliced
- fresh cilantro, to taste, chopped
- cabbage, to taste, shredded
- lime juice, to taste
Directions
Step 1 –Combine the pork, 1 of the sliced onions, 1 of the sliced jalapeños, the orange peel, the soda, the salt, and the pepper in a slow cooker.
Step 2 –Cover and cook on low for 8 hours.
Step 3 –Uncover and shred the meat using two forks.
Step 4 –Serve on the flour tortillas and top with your desired toppings.
