Ingredients
- 4 boneless, skinless chicken breasts
- 1 1/2 tablespoons Italian seasoning
- salt, to taste
- pepper, to taste
- 1 (10.5 ounce) can cream of chicken soup, low sodium
- 1 cup sour cream
- 1 (6 ounce) box stuffing mix
- 3/4 cup low sodium chicken broth
- 2 cups fresh green beans
Optional toppings:
- 1/2 cup onions, diced
- 1/2 cup celery, diced
- 1/4 cup dried cranberries
- 1/2 cup sausage, crumbled, cooked
- 2 teaspoons dry rosemary
Directions
Step 1 –Season the chicken with the Italian seasoning, salt, and pepper.
Step 2 –Place into the bottom of a lightly greased slow cooker.
Step 3 –In a large bowl, mix the sour cream, soup, stuffing, and half of the chicken broth together.
Step 4 –Add the green beans and stuffing mixture to the slow cooker.
Step 5 –Cook for 4 hours on high heat, or on low for 6-7 hours.
Step 6 –Dress with optional toppings and serve with gravy, mashed potatoes, or buttermilk biscuits, if desired.
Step 7 –If you prefer additional moisture, add the remaining chicken broth, mix well, and cook for an additional 10 minutes.
Step 8 –Serve hot with your preferred toppings!
