Ingredients
- 3-4 pounds chuck roast, boneless
- salt, to taste
- pepper, to taste
- 2 tablespoons olive oil
- 1 (10.5 ounce) can beef consommé
- 1 (14.5 ounce) can beef broth
- 1 onion, sliced
- 1 tablespoon soy sauce
- 2 tablespoons Worcestershire sauce
- 4 hoagie rolls, plus more as desired
- 8 slices mozzarella cheese
Directions
Step 1 –Season each side of the chuck roast with salt and pepper.
Step 2 –In a large pan over the stovetop, add the olive oil and turn the heat on to medium-high.
Step 3 –Once the oil is shimmering, sear the sides of the roast until it has a golden-brown crust, about 3-4 minutes per side.
Step 4 –Put the chuck roast into your slow cooker.
Step 5 –Add in the beef consommé, beef broth, onion, soy sauce, and Worcestershire sauce.
Step 6 –Cover and cook on low heat until the beef is tender, about 8-10 hours.
Step 7 –Move the roast from the slow cooker and shred it with a fork.
Step 8 –Pour the cooking liquids from the slow cooker into a medium saucepan on the stovetop over medium heat.
Step 9 –Cook the leftover liquids until thickened and reduced slightly, about 7-10 minutes.
Step 10 –Slice open the hoagies.
Step 11 –Preheat the broiler to high.
Step 12 –Fill each hoagie with shredded beef.
Step 13 –Top the shredded beef with 2 slices of the mozzarella for each roll.
Step 14 –Broil the sandwiches until the cheese melts, about 3-5 minutes.
Step 15 –Serve the sandwiches with the jus dipping sauce on the side.
