The chicken is slow cooked to tender perfection and soaked in flavorful bouncy salsa for even greater richness and tang. Ingredients
For the chicken:
- 1 1/2 pounds chicken breasts, boneless and skinless
- 2 teaspoons chili powder
- 1 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- 1 teaspoon salt, plus more, to taste
- 1 teaspoon freshly ground black pepper, plus more, to taste
- 1 clove garlic, minced
- 1 cup jarred salsa
- 2 tablespoons cilantro, chopped
Optional, for serving:
- 10 corn or flour tortilla shells, warmed
- Monterey Jack or Mexican blend cheese, to taste, shredded
- romaine lettuce, to taste, shredded
- Roma tomatoes, to taste, diced
- avocados, to taste, diced
- sour cream, to taste
- hot sauce, to taste
Directions
Step 1 -Place the chicken breasts into a slow cooker.
Step 2 -Using a small bowl, whisk together the chili powder, the cumin, the coriander, 1/4 teaspoon of the salt, and 1/4 teaspoon of the pepper.
Step 3 -Pour the spice mixture evenly over both of the sides of the chicken breasts.
Step 4 -Add the garlic and the salsa over the chicken breasts, making sure to cover the chicken entirely.
Step 5 -Cover the slow cooker and cook on low for about 5-6 hours.
Step 6 -Transfer the chicken breasts and let them cool on a cutting board until they can be easily handled.
Step 7 -Shred the chicken into bite-sized pieces and return the chicken and any accumulated juices to the slow cooker, stirring to combine.
Step 8 -Add in the cilantro and toss to coat.
Step 9 -Taste for seasoning, and add the extra salt and the extra pepper, as needed.
Step 10 -Place the shredded chicken in the tortilla shells and serve with your favorite toppings.
