Ingredients
- 3/4 cup white onion, chopped
- 3 cloves garlic, minced
- 2 tablespoons unsalted butter
- 8 ounces mushrooms, coarsely chopped
- 8 cups green beans, cut into 1-inch-long pieces
- 1 cup vegetable or chicken broth
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 tablespoon cornstarch
- 3/4 cup sour cream
- 1 cup cheddar cheese, shredded
- 4 ounces crispy fried onions
Directions
Step 1 –Turn the pressure cooker on to sauté mode.
Step 2 –Add the onions, the garlic, and the butter to the bowl of the pressure cooker and sauté, while stirring, about 1-2 minutes.
Step 3 –Add the mushrooms to the onion mixture and sauté, while stirring, about 2-3 minutes.
Step 4 –Add the green beans, the broth, the salt, and the pepper to the mushroom mixture and stir to combine.
Step 5 –Secure the lid on the pressure cooker and turn the pressure valve to seal.
Step 6 –Cook the green bean mixture on manual high pressure for 1 minute.
Step 7 –Allow for a quick pressure release on the pressure cooker.
Step 8 –Unscrew the lid and add the cornstarch, the sour cream, and the cheese to the green bean mixture. Stir to combine.
Step 9 –Pour the green bean mixture in a small baking dish and sprinkle with the crispy fried onions.
