Ingredients
For the chicken and vegetables:
- 1 pound chicken thighs, boneless and skinless
- 1/2 teaspoon kosher salt
- 1/2 teaspoon ground black pepper
- 2 tablespoons olive oil
- 1 cup cherry tomatoes, halved or chopped
- 1 cup sweet corn kernels, raw, grilled, cooked, or frozen
- 1/3 cup scallions, sliced
- 1/4 cup sharp cheddar cheese, grated
For the dressing:
- 1/4 cup plain greek yogurt
- 1/4 cup mayonnaise
- 1 1/2 tablespoons lemon juice
- 1/4 teaspoon liquid smoke
- salt, to taste
- ground black pepper, to taste
Directions
Step 1 –Preheat the grill to the highest heat.
Step 2 –Season the chicken with salt, the pepper, and the garlic powder.
Step 3 –Brush the chicken with the olive oil.
Step 4 –Cook the chicken on the grill until fully cooked, reading 165 degrees F when tested with a thermometer, about 6 minutes on each side.
Step 5 –After cooking, allow the chicken to cool.
Step 6 –Shred the chicken with a fork.
Step 7 –Combine the chicken, the tomatoes, the corn, the scallions, and the cheese in a large mixing bowl.
