Get your day off to a healthy and tasty start with some of these Soft Scrambled Eggs! These fluffy, cheesy bites of protein next to a unique but delicious pairing of lemony asparagus will have you feeling like you’re dining five-star, first thing in the morning! And you know if things are getting kicked off like that, then the rest of your hours are bound to be filled with great things, too. Soft Scrambled Eggs seem to have that effect on people… only greatness can come after a satisfying breakfast like this!

Ingredients
For the asparagus:
- 1 bunch asparagus, washed and dried, lower parts removed and discarded
- 1/4 cup water, plus more, to taste
- kosher salt, to taste
- juice of 1 lemon
For the eggs:
- 8 eggs
- 4 ounces goat cheese, crumbled, or 1/3 cup cheddar cheese, shredded
- 1/2 teaspoon kosher salt
- ground black pepper, to taste
- 2 tablespoons butter
- 1 handful chives, thinly sliced

Directions
Step 1 –In a dry skillet over medium-high heat, add the asparagus and cook, stirring occasionally, about 3 minutes.
Step 2 –Add 1/4 cup of the water to the asparagus and cook until the thickest pieces are tender, adding more of the water if needed, about 3-7 minutes.
Step 3 –Sprinkle the asparagus with the salt and drizzle with the lemon juice.
Step 4 –In a medium bowl, whisk the eggs together until well-beaten.
Step 5 –Add the cheese, the remaining 1/2 teaspoon of the salt, and the pepper to the eggs and stir to combine.
Step 6 –In a skillet over medium heat, melt the butter, tilting the pan to ensure it is coated.
Step 7 –Pour the egg mixture into the skillet and cook until the eggs begin to set. Occasionally use a flat spatula to slowly scrape sections of the eggs to create folds. Do this until the eggs form soft folds.
Step 8 –Transfer the eggs from the heat before they fully-harden.
Step 9 –Serve the eggs immediately with the asparagus, garnished with the chives.
