Ingredients

  • 1 (30-ounce) package frozen shredded hashbrown potatoes, thawed
  • 1 (14-ounce) package fully-cooked polish sausage, cut into slices, quartered into bite-sized pieces
  • 1 1/2 cups sharp cheddar cheese, grated
  • 1 cup sour cream, room temperature
  • 1 medium onion, very finely diced
  • 1/4 cup butter, melted
  • 1/4 teaspoon pepper
  • 1/4 teaspoon kosher salt
  • 1 (10.5-ounce) can condensed cream of chicken soup, undiluted
  • fresh herbs, optional, to taste, chopped, for garnish
  • green onions, optional, to taste, sliced, for garnish

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –Grease a 13×9-inch baking dish.

Step 3 –In a large mixing bowl, stir the hashbrowns, the sausage, the cheddar cheese, the sour cream, the onion, the butter, the pepper, the salt, and the cream of chicken soup together until combined.

Step 4 –Pour the hashbrown mixture into the prepared baking dish and bake, uncovered, until it is hot, bubbly, and lightly browned on top, about 40 minutes.
