Ingredients

For the grits:

  • 15 ounces of seafood stock
  • 1/2 cup white wine
  • 1/2 cup water
  • 1/2 teaspoon kosher salt
  • 1 cup grits
  • 3 tablespoons heavy cream
  • 3 tablespoons unsalted butter
  • 2 cups sharp cheddar cheese, shredded

For the shrimp:

  • 2 tablespoons olive oil
  • 1 pound large shrimp, shelled, deveined
  • 1/4 teaspoon black pepper
  • 3 cloves garlic, minced
  • 1 tablespoon flat-leaf parsley, chopped
  • 1 teaspoon smoked paprika
  • 1 teaspoon Worcestershire sauce
  • hot sauce, to taste
  • 4 teaspoons lemon juice

Directions

Step 1 –In a medium saucepan, combine the seafood stock, white wine, water, and salt.

Step 2 –Place the saucepan over medium-high heat and bring the mixture to a boil.

Step 3 –Add the grits and cook, stirring periodically, until thickened and tender, about 5-10 minutes.

Step 4 –Add the cream, butter, and cheese, and gently stir.

Step 5 –Cover and remove the saucepan from the heat.

Step 6 –In a large skillet over medium-high heat, heat the oil.

Step 7 –Coat the shrimp with black pepper.

Step 8 –Add the shrimp to the skillet and cook until they begin to turn golden-brown, for about 3 minutes.

Step 9 –Add the garlic, parsley, paprika, Worcestershire sauce, hot sauce, and lemon juice and cook until a sauce forms and the shrimp are cooked through at 145 degrees F, about 2-3 minutes.

Step 10 –Scoop the grits into serving bowls.

Step 11 –Top with the shrimp and sauce and serve.
