When a craving for some Southwest flare is on your mind, add a side dish that will enhance your meal in a whole new direction. Southwest Layered Rice is the perfect choice for your next meal adventure that’s headed out West. Tender rice is layered between seasoned sour cream and cheddar cheese to form layers upon layers of the great tastes you love! Ingredients
- 2 cups sour cream
- 1 tablespoon sugar
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 3 scallions, chopped, plus more, to taste, for garnish
- 1/2 cup bacon slices, cooked and chopped
- 3 cups cheddar cheese, shredded
- 3 cups rice, cooked
Directions
Step 1 –Preheat the oven to 425 degrees F.
Step 2 –Coat an 8×8-inch baking dish with nonstick cooking spray.
Step 3 –In a medium bowl, add the sour cream, the sugar, the salt, and the black pepper and stir to combine.
Step 4 –In a large bowl, add 3 of the chopped scallions, the chopped bacon, and the cheddar cheese and stir to combine.
Step 5 –Add 1/3 of the cooked rice to the bottom of the prepared baking dish.
Step 6 –Spread 1/3 of the sour cream mixture over the top of the rice.
Step 7 –Sprinkle 1/3 of the cheese mixture over the top of the sour cream mixture.
Step 8 –Repeat the layers twice, starting with the rice and ending with the cheese mixture.
Step 9 –Bake the rice mixture until it is bubbly and brown around the edges, about 25-30 minutes.
Step 10 –Serve the rice mixture garnished with the extra scallions.
