Ingredients
- 4 (6-ounce) chicken breast halves, boneless and skinless
- 1/2 teaspoon ground cumin
- 1/2 teaspoon cayenne pepper
- 1 tablespoon canola oil
- 1 cup fresh or frozen corn
- 1 cup salsa
- 1 cup Pepper Jack cheese, shredded
- 1/4 cup pickled jalapeño slices
- 1/4 cup sour cream
Directions
Step 1 –Flatten the chicken to 1/2-inch thickness.
Step 2 –Sprinkle both sides of the chicken with the cumin and the cayenne.
Step 3 –In a large skillet, heat the oil over medium heat.
Step 4 –Cook the chicken in the hot oil until no longer pink and cooked through at 165 degrees F, about 4-5 minutes per side.
Step 5 –Combine the corn and the salsa and spoon the mixture over the chicken.
Step 6 –Top the chicken with the cheese and the jalapeño slices.
Step 7 –Cover and cook until heated through and the cheese is melted, about 3-5 minutes.
Step 8 –Top each chicken breast with a dollop of the sour cream.
Step 9 –Serve.
