Peaches are traditionally considered a summer fruit, but there’s no reason you can’t enjoy them during the autumn as well, especially if Spiced Peach Cobbler is on the menu! Ripe peaches are mixed with sugar (always a good start) and warm spices to bring the most of their juicy, floral flavor. On top is a tender yet crisp crust that feels almost like dumplings with just a hint of citrus brightness. For the peaches:

  • 1/2 cup sugar
  • 3 tablespoons cornstarch
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground cardamom
  • 12 medium peaches, peeled and sliced
  • 1 tablespoon lemon juice

For the topping:

  • 1 cup all-purpose flour
  • 1/4 cup sugar
  • 2 teaspoons orange zest, grated
  • 3/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking soda
  • 3 tablespoons cold butter
  • 3/4 cup buttermilk


Step 1 –Preheat the oven to 375 degrees F.

Step 2 –Coat a 7×11-inch baking dish with cooking spray.

Step 3 –In a large bowl, mix 1/2 cup of the sugar, the cornstarch, the cinnamon, and the cardamom. Add the peaches and the lemon juice and toss to combine.

Step 4 –Transfer the mixture to the prepared baking dish.

Step 5 –In a small bowl, whisk the all-purpose flour, the remaining sugar, the grated orange zest, the baking powder, the salt, and the baking soda.

Step 6 –Cut the cold butter into the flour mixture until the mixture resembles coarse crumbs.

Step 7 –Add the buttermilk to the topping mixture and stir just until moistened.

Step 9 –Bake, uncovered, until the topping is golden brown, about 30-35 minutes.
