When spring makes its return, it brings a lot of good things with it. Warmer weather, beautiful blooms, fun outdoor activities, longer days, and so much more! In terms of food, we love the freshness it brings to our table, so we made this Spring Delight Salad to celebrate. Nothing beats a big bowl filled with garden-fresh cucumbers, freshly picked strawberries, home-plucked herbs, drizzled with something tangy and then sprinkled with something creamy. Munching on such a thing makes us even more excited about the refreshment the season brings! Spring Delight Salad encompasses all that brings us joy as the warmer weather starts to roll in. Ingredients

  • 2 cups fresh strawberries, cut into thin coin-shaped slices
  • 1 English cucumber, cut into thin coin-shaped slices
  • 2 ounces feta cheese, crumbled
  • 2 tablespoons olive oil
  • 2 teaspoons balsamic glaze
  • 2 teaspoons flaky sea salt
  • 1/4 cup fresh basil, roughly chopped
  • 1/4 cup fresh mint, roughly chopped

Directions

Step 1 –In a large bowl, add the strawberries, the cucumbers, and the feta and toss to combine.

Step 2 –Drizzle the strawberry mixture with the olive oil and the balsamic glaze.

Step 3 –Sprinkle the salad mixture with the salt and top with the basil and the mint.

Step 4 –Let the salad rest for 5 minutes.

Step 5 –Serve.
