Ingredients

For the beignets:

  • 1/4 cup butter, room temperature
  • 3/4 cup sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup plus 2 tablespoons warm water, divided
  • 1/2 cup evaporated milk
  • 1 (.25-ounce) package quick-rise yeast
  • 1 large egg
  • 3 1/4-3 3/4 cups all-purpose flour, divided
  • oil, to taste, for deep-fat frying

For serving:

  • confectioners’ sugar, to taste
  • assorted berries, such as blueberries and strawberries, optional, to taste
  • whipped topping, optional, to taste

Directions

Step 1 –In a bowl, beat the butter, the sugar, the salt, and the cinnamon until crumbly.

Step 2 –Beat 1/2 cup of the water and the evaporated milk into the butter mixture.

Step 3 –In another bowl, add the yeast and the remaining water and let it sit until it dissolves.

Step 4 –Add the yeast mixture to the butter mixture.

Step 5 –Beat the egg into the dough mixture until blended.

Step 6 –Add 2 cups of flour to the dough mixture and mix until well-blended.

Step 7 –Stir enough of the remaining flour into the dough mixture to form a soft dough.

Step 8 –Place the dough in a greased bowl and turn once to coat the top.

Step 9 –Cover and refrigerate the dough for at least 4 hours or overnight.

Step 10 –Let the dough sit until it reaches room temperature.

Step 11 –Use the remaining flour to prepare a work surface and roll the dough into a 16×12-inch rectangle.

Step 12 –Cut the dough rectangle into 2-inch squares.

Step 13 –In a deep cast-iron skillet, heat the oil to 375 degrees F.

Step 14 –Drop the beignets, a few at a time, into the hot oil and fry until golden-brown, about 1 minute per side.

Step 15 –Drain the beignets on paper towels and dust with the confectioners’ sugar.

Step 16 –Serve the beignets with the assorted berries and the whipped topping.
