This Stay Healthy Scramble is loaded with fluffy eggs, fresh spinach, shredded mozzarella, and (yes!) tasty quinoa for that special filling and flavorful boast you need for a great start to the day. Stay Healthy Scramble will make you say, “yes, please” to a new way of enjoying a healthy breakfast. Good morning to you!

Ingredients

  • 1 tablespoon extra-virgin olive oil
  • 2 cloves garlic, chopped
  • 2 large eggs, slightly beaten
  • 1 cup fresh spinach, roughly chopped
  • 2 tablespoons mozzarella cheese, shredded
  • 1/4 cup quinoa, cooked and warm
  • salt, to taste
  • black pepper, to taste
  • 2 tablespoons fresh basil leaves, for garnish

Directions

Step 1 –In a medium skillet over medium heat, add the olive oil and the garlic and sauté until the garlic is fragrant.

Step 2 –In a small bowl, add the eggs to the garlic mixture and whisk to combine.

Step 3 –As the eggs start to cook, add the spinach, the mozzarella cheese, and the quinoa to the egg mixture and cook, stirring constantly, until the eggs are fluffy and cooked through.

Step 4 –Season the scramble with the salt and the pepper.

Step 5 –Serve the scramble garnished with the basil.
