Ingredients
- 8 chicken thighs, boneless and skinless
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 2 tablespoons cornflour
- 2 tablespoons vegetable oil
- 1 tablespoon unsalted butter
- 4 cloves garlic, minced
- 1/3 cup chicken stock
- 1/3 cup honey
- 1 tablespoon light soy sauce
- 1 tablespoon rice vinegar
- boiled rice, optional, for serving
- Optional garnishes:
- 1 tablespoon parsley, finely chopped
- 1/2 teaspoon chili flakes
Directions
Step 1 –Set the chicken thighs in a bowl and add in the salt, pepper, and cornflour.
Step 2 –Toss the chicken in the cornflour, coating each piece fully.
Step 3 –Using a large frying pan or skillet, heat the oil on the stove-top over high heat.
Step 4 –Once the oil is heated, add in the chicken thighs, cooking on one side until golden brown, about 4-5 minutes. Then, flip over and cook on the other side for an additional 2 minutes.
Step 5 –Add the butter to the pan and allow it to melt.
Step 6 –Add in the garlic and stir together well. To prevent the garlic from burning, reduce the heat to medium.
Step 7 –Combine the chicken stock, honey, light soy sauce, and rice vinegar in a bowl, mixing well to create the sauce.
Step 8 –Pour the sauce mixture into the pan and increase the heat, bringing the sauce to a boil.
Step 9 –Simmer until the sauce thickens and reduces and the chicken is cooked through, about 4-5 minutes. A meat thermometer inserted into the chicken should read 165 degrees F.
Step 10 –Sprinkle the chopped parsley and chili flakes on top and serve over boiled rice!
