Ingredients
- 4 (4-ounce) chicken breast halves, boneless and skinless
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- 1 tablespoon canola oil
- 1 medium sweet onion, cut into 1-inch pieces
- 1 small sweet red pepper, cut into 1-inch pieces
- 2/3 cup honey barbeque sauce
Directions
Step 1 –Sprinkle the chicken halves with the salt and the pepper.
Step 2 –In a large skillet, heat the oil over medium heat.
Step 3 –Add the chicken halves and cook until they reach 165 degrees F internally, about 4-6 minutes per side.
Step 4 –Transfer the chicken halves from the heat and keep them warm.
Step 5 –Add the onions and the red peppers to the same pan and cook, stirring, until tender, about 5-6 minutes.
Step 6 –Add the barbeque sauce and heat through.
Step 7 –Return the chicken halves to the pan, coating thoroughly with the sauce.
Step 8 –Plate the chicken, then top with the remaining sauce, the onions, and the peppers, and serve.
