Ingredients
For the lemon poppy seed dressing:
- 1/2 cup light mayonnaise
- 1 tablespoon lemon zest plus 3 tablespoons fresh lemon juice
- 3 tablespoons honey
- 2 1/2 teaspoons poppy seeds
- 1/4 teaspoon salt
For the salad:
- 1 pound chicken breasts, boneless and skinless, grilled and cooled, diced
- 8 ounces baby spinach
- 2 1/2 cups strawberries, sliced
- 3/4 cup walnuts, lightly toasted and chopped
- 1 large avocado, diced
- 4 ounces feta cheese, crumbled
- 1/3 cup red onion, chopped
Directions
Step 1 –Whisk the mayonnaise, the lemon zest, the lemon juice, the honey, the poppy seeds, and the salt in a mixing bowl until well-combined.
Step 2 –Cover and refrigerate the dressing until ready to serve.
Step 3 –In a large salad bowl, layer the chicken and the spinach.
