Ingredients
- 1 pound rotini pasta
- 1/2 cup red wine vinegar
- 1/2 teaspoon dried oregano
- 1/2 teaspoon ground cumin
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
- 1/2 cup oil, neutral-flavored
- 1 (16 ounce) can black beans, rinsed and drained
- 1 cup frozen corn kernels
- 2 tomatoes, chopped
- 1 red bell pepper, diced
- 1/2 cup black olives, optional
- 1/4 cup cilantro, optional, chopped
- 1/2 cup green onions, chopped
- 1/4 red onion, chopped
Directions
Step 1 –Prepare the pasta according to package directions.
Step 2 –Rinse and drain the pasta, and set it aside.
Step 3 –In a large bowl, whisk together the vinegar, the oregano, the cumin, the pepper, and the salt, stirring to combine.
Step 4 –Whisk in the oil.
