Summer Slaw

Ah, summer! The sun blazing down, steam rising from the morning dew, the heat swirling about like an ocean… whew, is it hot? A little refreshment would be lovely just about now. Summer Slaw cools you down with an infusion of lime brightness, tropically-tangy pineapple, and buttery papaya. Your tastebuds will be fanning themselves with crunchy cabbage and bright red pepper! A few bites of Summer Slaw will rejuvenate you for whatever the summer throws at you next… which will probably be more heat!

Ingredients

  • 1/2 cup pineapple juice
  • 1/4 cup olive oil
  • 2 tablespoons lime juice
  • 2 tablespoons fresh cilantro, minced
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon salt
  • 6 cups cabbage, shredded
  • 1 1/2 cups papaya, chopped and peeled
  • 1 1/2 cups fresh pineapple, cubed
  • 1 small sweet red pepper, chopped

Directions

Step 1 –Whisk together the pineapple juice, olive oil, lime juice, cilantro, cumin, and salt.

Step 2 –Place the cabbage, papaya, pineapple, and red pepper in a large bowl.

Step 3 –Drizzle the cabbage mixture with the dressing, tossing everything to coat.

Step 4 –Cover and refrigerate for at least 2 hours.

Step 5 –Stir and serve.
