And with a name like that, it’s clear you’ll want this dish on your table the next time that dreaded “end” of the weekend feeling rolls around. Then again, how could we ever let this dish slip our minds? Those tender pasta noodles topped with crispy pancetta and rich parmesan taste so, so good. Better yet, this dish is super easy to make (which makes it even more weekend-appropriate), so you won’t be left feeling overwhelmed or spending hours in the kitchen. Everyone’s bellies will be absolutely full, helping the whole house sleep peacefully before another crazy Monday rolls around. Are you convinced yet? Ingredients
- 1 pound spaghetti
- 3 eggs
- 1 cup parmesan cheese, shredded, plus more, to taste, for serving
- freshly ground black pepper, to taste
- 6 slices pancetta or bacon, chopped
- 2 cloves garlic, minced
- salt, to taste
- parsley, optional, to taste, for garnish
Directions
Step 1 –In a pot of salted boiling water, cook the pasta to al dente, according to the package directions.
Step 2 –Reserve 1 cup of the pasta water, then drain the noodles well (but do not rinse them).
Step 3 –In a medium bowl, whisk the eggs, the parmesan cheese, and the black pepper together.
Step 4 –In a large skillet over medium heat, cook the pancetta until crisp.
Step 5 –Transfer the cooked pancetta to a plate using a slotted spoon.
Step 6 –Add the garlic to the pan and cook for 1 minute.
Step 7 –Add the hot pasta to the skillet with the garlic and toss to coat.
Step 8 –Transfer the skillet from the heat and pour in the egg mixture, mixing well with tongs. If needed, add the reserved pasta water to adjust the consistency of the sauce.
Step 9 –Add the cooked pancetta to the pasta mixture and toss until combined.
Step 10 –Season the pasta mixture with the salt and the pepper.
Step 11 –Serve the spaghetti carbonara garnished with the extra parmesan and the parsley.
