- 2 (6-8-ounce) salmon fillets, skin-on, 1-inch thick
- 1/2 teaspoon kosher salt, plus more to taste
- freshly ground black pepper, to taste
- 2 tablespoons extra-virgin olive oil
- 1 tablespoon Dijon mustard
- lemon wedges, for serving
