Ingredients
For the lemon vinaigrette:
- 1/4 cup olive oil
- 1/4 teaspoon lemon zest
- 1/4 cup fresh lemon juice
- 1/2 teaspoon honey or date syrup
- 1/2 clove garlic, minced
- salt, to taste
- pepper, to taste
For the salad:
- 1 medium avocado, cut into bite-size pieces
- 1 cup broccoli, cut into bite-size pieces
- 1/4 cup blueberries
- 1/4 cup raspberries
- 1/4 cup blackberries
- 2 medium plums, cut into bite-size pieces
- 2 medium nectarines, cut into bite-size pieces
- 1/4 cup walnuts, chopped
Directions
Step 1 –Add the olive oil, the lemon zest, the lemon juice, the honey, the garlic, the salt, and the pepper to a bowl and whisk until combined.
Step 2 –Refrigerate the dressing until ready to use.
Step 3 –Divide the avocado, the broccoli, the blueberries, the raspberries, the blackberries, the plums, the nectarines, and the walnuts between two serving bowls.
Step 4 –Toss the salads with the dressing just before serving.
