The surprise of Surprise Stir-Fry is the ease of it. It doesn’t take more than half an hour, but the results? So, so, so delicious. The chicken is savory, the broccoli tender and refreshing, and the sauce is thick and flavorful with plenty of umami, sweetness, and aromatics to really make your taste buds happy! Served over rice, Surprise Stir-Fry will surprise you by just how good it can be!

Ingredients

  • 2 teaspoons cornstarch
  • 1 tablespoon cold water
  • 3 teaspoons olive oil, divided
  • 1 pound chicken breasts, boneless and skinless, cut into 1-inch pieces
  • 1 clove garlic, minced
  • 3 tablespoons honey
  • 2 tablespoons reduced-sodium soy sauce
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 (16-ounce) package frozen stir-fry vegetable blend with broccoli
  • rice, optional, to taste, cooked and hot, for serving

Directions

Step 1 –In a bowl, add the cornstarch and the water and stir to combine.

Step 2 –In a large, nonstick skillet over medium-high heat, heat 2 teaspoons of the olive oil.

Step 3 –Add the chicken and the garlic and cook, while stirring frequently, until the garlic is fragrant, about 1 minute.

Step 4 –Add the honey, the soy sauce, the salt, and the pepper to the skillet and cook, while stirring, until the chicken is coated, is no longer pink, and the meat reaches an internal temperature of 165 degrees F, about 2-3 minutes.

Step 5 –Transfer the chicken mixture to a plate.

Step 6 –In the same skillet, heat the remaining olive oil.

Step 7 –Add the stir-fry vegetables and cook, while stirring, until just tender, about 4-5 minutes.

Step 8 –Add the chicken mixture back to the pan.

Step 9 –Add the slurry mixture to the skillet and bring it to a boil.

Step 10 –Cook and stir until the sauce is thickened, about 1 minute.

Step 11 –Serve the chicken and the veggies over the rice.
