She loves to have these extravagant cookouts where everyone piles their plates full of hamburgers and hot dogs… and of course, her version of the beloved creamy, sweet, and crunchy pasta salad. She really enjoys watching people enjoy her food while they laugh and have a good time together, and her guests rave and rave for weeks and weeks about the time they had and all the food they enjoyed. Sweet Mae’s Macaroni Salad is always on their list of top three favorites, and once you taste it, you’ll understand why!
Ingredients
- 1 (16-ounce) package elbow macaroni
- 4 medium carrots, shredded
- 1 large green pepper, chopped
- 1 medium red onion, chopped
- 2 cups mayonnaise
- 1 (14-ounce) can sweetened condensed milk
- 1 cup cider vinegar
- 1/2 cup sugar
- 1 teaspoon salt
- 1/2 teaspoon pepper
Directions
Step 1 –In a large pot of salted boiling water, cook the macaroni to al dente, according to the package directions.
Step 2 –Drain the macaroni and rinse it under cold water. Drain the macaroni well.
Step 3 –In a large bowl, combine the macaroni, the carrots, the green pepper, and the red onion.
Step 4 –In a bowl, whisk the mayonnaise, the condensed milk, the cider vinegar, the sugar, the salt, and the pepper together until it is smooth and the sugar dissolves.
Step 5 –Stir the mayonnaise mixture into the macaroni mixture.
Step 6 –Cover the macaroni salad and refrigerate it overnight.
Step 7 –Serve.
