Ingredients

  • 1 1/2 pounds sweet potatoes, peeled and cut into 1/2-inch pieces
  • 2 tablespoons water
  • 1 tablespoon salted butter
  • 1 pound pork breakfast sausage
  • 6 large eggs
  • 1 cup half-and-half
  • 1/2 teaspoon Italian seasoning
  • 2 cups fine, dry breadcrumbs
  • 1 cup onion, refrigerated and pre-chopped
  • 8 ounces mozzarella cheese, shredded and divided
  • parsley, to taste and chopped

Directions

Step 1 –Lightly grease a 5-quart slow cooker.

Step 2 –Place the sweet potatoes in a microwave-safe bowl with the water.

Step 3 –Cover the bowl with microwave-safe plastic wrap and microwave on high until tender, about 4 minutes.

Step 4 –Discard the plastic wrap and set the potatoes aside.

Step 5 –In a large skillet over medium-high heat, melt the butter.

Step 6 –Brown the sausage in the melted butter, stirring often, until browned and crumbled, about 5-6 minutes.

Step 7 –In a medium bowl, whisk the eggs, half-and-half, and the Italian seasoning together.

Step 8 –Add the cooked sausage, the egg mixture, the breadcrumbs, the tender sweet potatoes, the onion, and 1 cup of the cheese in the prepared slow cooker, stirring to combine.

Step 9 –Sprinkle the mixture with the remaining cheese.

Step 10 –Cover and cook on low heat until almost set, about 3 1/2-hours on low.

Step 11 –Uncover and cook on low until the edges are browned and the liquid on top is evaporated, about 20 minutes.

Step 12 –Garnish with the parsley.

Step 13 –Serve.
