Ingredients

For the marinade:

  • 1/2 cup low-sodium soy sauce
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon crushed red pepper, optional
  • 3 cloves garlic, chopped
  • 1/8 teaspoon ground pepper
  • 6 pork loin chops, pounded to 1 1/2-inch-thick

For the pineapple salsa:

  • 2 cups fresh pineapple, diced
  • 1 jalapeño, seeds removed, chopped
  • 1/2 red bell pepper, diced
  • 1/4 cup red onion, chopped
  • 1/2 lime, juiced
  • salt, to taste

Directions

Step 1 –In a medium mixing bowl, whisk the soy sauce, the ground ginger, the crushed red pepper, the garlic, and the ground pepper together.

Step 2 –In a large resealable plastic bag, combine the pork chops and the marinade, and allow them to marinate for at least 2 hours and up to overnight.

Step 3 –Preheat the grill or the grill pan over medium-high heat.

Step 4 –Place the pork chops on the grill and cook until they reach 145 degrees F internally when tested with a meat thermometer, about 6-7 minutes per side.

Step 5 –Transfer the pork chops to a cutting board and cover them loosely with foil.

Step 6 –Let the pork chops rest, about 5 minutes.

Step 7 –Combine the pineapple, the jalapeño, the red bell pepper, and the red onion in a bowl.

Step 8 –Add the lime juice and the salt to the salsa and mix until evenly coated.

Step 9 –Serve the pork topped with the salsa.
