Ingredients
- 6 tablespoons taco seasoning
- 2 tablespoons tomato paste
- 1/4 cup green chiles, chopped
- 2 large eggs
- 3/4 cup plain breadcrumbs
- 1/4 cup cilantro, chopped
- 2 pounds ground beef
Directions
Step 1 –Preheat the oven to 400 degrees F.
Step 2 –Spray a 9×13-inch baking dish with cooking spray.
Step 3 –In a large bowl, whisk together the taco seasoning, the tomato paste, the green chiles, the eggs, the breadcrumbs, and the cilantro until well-combined.
Step 4 –Gently mix in the beef until combined.
Step 5 –Roll the beef mixture into 1-inch balls.
Step 6 –Place the balls into the prepared baking dish.
Step 7 –Bake until the meatballs are cooked through at 160 degrees F, about 20-22 minutes.
