Ingredients
- 1/4 cup butter, cubed
- 1 medium onion, chopped
- 3/4 cup celery, sliced
- 1/4 cup green pepper, diced
- 1/4 cup all-purpose flour
- 1 teaspoon sugar
- 1 1/2 cups chicken broth
- 1/4 cup half-and-half
- 3 cups turkey, cooked and cubed, can substitute chicken
- 1 (4-ounce) can sliced mushrooms, drained
- 6 slices bread, toasted
- black pepper, optional, to taste, for garnish
- parsley, optional, to taste, chopped, for garnish
Directions
Step 1 –In a large skillet over medium heat, melt the butter.
Step 2 –Add the onion, the celery, and the green pepper to the melted butter and cook until tender, about 5 minutes.
Step 3 –Add the flour and the sugar to the vegetable mixture and cook, while stirring, until a paste forms, about 1-2 minutes.
Step 4 –Gradually stir in the broth and bring it to a boil.
Step 5 –Boil the sauce mixture until thickened, about 1 minute.
Step 6 –Reduce the heat to low.
Step 7 –Add the half-and-half, the turkey, and the mushrooms to the sauce mixture and cook until heated through.
Step 8 –Serve with the toast, garnished with the black pepper and the parsley.
