The pork is tender and savory, infused with sweet and smoky brown sugar and spicy chili powder, then is slow-cooked in cola for a fantastic malty burst of flavor! Ingredients
- 1 (4-pound) pork shoulder or pork butt
- 1 tablespoon brown sugar
- 1 tablespoon chili powder
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1 teaspoon cumin
- 1 teaspoon kosher salt
- 1 teaspoon black pepper
- 2 tablespoons oil
- 12 ounces cola
- barbeque sauce, optional, to taste, of your choice, for serving
Directions
Step 1 –Preheat the oven to 300 degrees F.
Step 2 –Trim the pork of excess fat and cut it into 4 pieces.
Step 3 –In a large bowl, add the brown sugar, the chili powder, the onion powder, the garlic powder, the cumin, the salt, and the black pepper and mix until combined.
Step 4 –Coat the pork pieces on all sides with the spice mixture.
Step 5 –In a Dutch oven pot over medium-high heat, add the oil.
Step 6 –Add the pork to the hot oil and cook until seared on all sides, about 30 seconds per side.
Step 7 –Transfer the Dutch oven from the heat.
Step 8 –Pour the cola around the pork in the Dutch oven.
Step 9 –Transfer the Dutch oven to the oven and cook, covered, for 3 hours.
Step 10 –Remove the lid and cook again until the pork is tender and easily pulls apart with a fork, about 1-2 hours.
Step 11 –Transfer the Dutch oven from the oven and shred the pork with a pair of forks.
Step 12 –Serve with the barbeque sauce.
