After traveling and eating all the greasy things, nothing is better than a healthy, home-cooked meal. Ingredients

  • 1 1/2 tablespoons olive oil
  • 1 (10-ounce) chicken breast, boneless and skinless, cut into strips
  • 3 cloves garlic, minced
  • 2 cups zucchini, chopped
  • 1 red bell pepper, chopped
  • 1 cup frozen peas
  • 2 cups rice, cooked
  • 1 1/2 tablespoons tamari sauce
  • 3 scallions, thinly chopped

Directions

Step 1 –In a skillet over medium heat, add the olive oil.

Step 2 –Add the chicken strips to the heated oil and cook, about 4 minutes.

Step 3 –Add the garlic, the zucchini, and the bell pepper to the chicken strips and sauté, about 2 minutes.

Step 4 –Stir the peas into the chicken mixture and cook, about 3 minutes.

Step 5 –Add the cooked rice and the tamari sauce to the chicken mixture and cook, stirring occasionally, until the rice is toasted and the meat reaches an internal temperature of 165 degrees F and the juices run clear, about 2-3 minutes.

Step 6 –Stir the scallions into the chicken mixture and cook, about 1-2 minutes. Turn off the heat.

Step 7 –Serve.
