This Taste-of-Summer Lemonade truly does embody the season! It’s cool, in both a literal sense (being served over ice will do that) and in terms of taste, with the chilling flavor of mint accenting the brightness of the lemon and a summertime sensation of fresh watermelon. There’s nothing more refreshing than Taste-of-Summer Lemonade; even if it isn’t summer, there’s no better way to find an oasis than this! It’s easy, breezy, and tasty all at once!
Ingredients
- 2 lemons, quartered
- 1 cup fresh mint leaves
- 1/2 cup light brown sugar, packed
- 1/2 medium seedless watermelon, rind removed and flesh cut into chunks
- 1 cup vodka, optional
- ice, to taste, for serving
Directions
Step 1 –Into a large pitcher, squeeze the lemons and then add the squeezed quarters.
Step 2 –Add the mint and the sugar to the lemon mixture and mash slightly with a wooden spoon, until the mint is bruised and the sugar dissolves.
Step 3 –In a blender, purée the watermelon in batches until smooth.
Step 4 –Pour the watermelon purée through a fine-mesh sieve into the pitcher and stir to combine.
Step 5 –Add the vodka to the lemonade.
Step 6 –Serve the lemonade over the ice.
