Ingredients
- 1 pound chicken breast halves, boneless and skinless, cut into strips
- 3 tablespoons canola oil, divided
- 4 medium carrots, julienned
- 1 medium sweet onion, julienned
- 1/2 cup soy sauce
- 1/4 cup packed brown sugar
- 4 servings rice, cooked and hot, for serving
- sesame seeds, optional, to taste, toasted, for topping
- green onions, optional, to taste, sliced, for topping

Directions
Step 1 –In a large skillet or wok, stir-fry the chicken in 2 tablespoons of the oil over medium-high heat until the meat reaches an internal temperature of 165 degrees F, about 6-8 minutes.
Step 2 –Transfer the chicken to a plate and set aside.
Step 3 –In the same skillet, stir-fry the carrots in the remaining oil for 2 minutes.
Step 4 –Add the onion to the carrots and stir-fry until the vegetables are tender, about 2-4 minutes.
Step 5 –Combine the soy sauce and the brown sugar in a small bowl and add it to the skillet.
Step 6 –Bring the sauce to a boil, then add the cooked chicken to the skillet.
Step 7 –Boil the chicken mixture until the sauce slightly thickens, about 5 minutes.
Step 8 –Serve the chicken mixture over the rice and sprinkle with the sesame seeds and the green onions.
