Ingredients
- 4 cups chicken, cooked and chopped
- 2 cups instant rice
- 1 (10.5-ounce) can cream of chicken soup
- 1 cup sour cream
- 1/2 cup frozen diced onion
- 1 (10-ounce) can diced tomatoes with green chilies
- 1/4 teaspoon cumin
- 1/2 teaspoon garlic powder
- 1 1/2 cups chicken broth
- 8 ounces cheddar cheese, shredded, divided
Directions
Step 1 –Preheat the oven to 350 degrees F.
Step 2 –Grease a 9×13-inch casserole dish.
Step 3 –In a large bowl, combine the cooked chicken, the rice, the cream of chicken soup, the sour cream, the onion, the tomatoes with green chilies and their juices, the cumin, the garlic powder, the chicken broth, and 1/2 of the cheddar cheese, mixing it well.
Step 4 –Pour the chicken mixture into the prepared casserole dish.
Step 5 –Top with the remaining cheddar cheese.
Step 6 –Bake until hot and bubbly, about 30 minutes.
