It’s a common joke that everything is bigger in Texas. We’re pretty sure that isn’t true, but we can attest that everything is tastier in Texas. Case in point, the Texas T-Bone: a savory strip of colossal beefy flavor, pan-seared in bacon fat and basted in rich, creamy butter. If that’s not giant flavor on a plate, we don’t know what is. Don’t let the name fool you; Texas T-Bone can be made with any steak you desire. All you need is the meat, the hot stove, and an eager appetite!
Ingredients
- 1 (8-16-ounce) T-Bone steak, can substitute with ribeye or New York Strip
- salt, to taste
- garlic powder, optional, to taste
- pepper, to taste
- 1 tablespoon bacon grease
- 2 tablespoons butter
Directions
Step 1 –Place the steak on a plate, platter, or sheet pan.
Step 2 –Season the steak liberally with the salt, the pepper, and the garlic powder on all sides, firmly pressing the seasonings into the meat.
Step 3 –Let the steak come up to room temperature, about 30-45 minutes.
Step 4 –Place a skillet over medium heat.
Step 5 –Add the bacon grease to the hot pan to melt.
Step 6 –Add the steak to the skillet and cook until lightly browned on one side, about 3-4 minutes.
Step 7 –Add the butter to the skillet and let it melt.
Step 8 –Flip the steak.
Step 9 –Baste the steak with the melted butter.
Step 10 –Cook the steak until it reaches your desired level of doneness, about 135 degrees F internally for medium rare and 10 degrees F more for medium, about 3-4 minutes.
Step 11 –Place the steak on its side and sear the fat, about 1-2 minutes.
Step 12 –Transfer the steak to a plate, cover, and let rest, about 5-10 minutes.
Step 13 –Serve.
