  • 2 (12-ounce) tubes of refrigerated buttermilk biscuits
  • 3 cups chicken, cooked and shredded
  • 1 cup fresh mushrooms, sliced
  • 1 (11.5-ounce) bottle of Thai peanut sauce, divided
  • 2 cups mozzarella cheese, shredded and divided
  • 1/2 cup sweet red pepper, chopped
  • 1/2 cup carrot, shredded
  • 4 green onions, sliced
  • 1/4 cup honey-roasted peanuts, coarsely chopped


Step 1 –Preheat the oven to 350 degrees F.

Step 2 –Grease a 9×13-inch baking pan.

Step 3 –Cut each of the biscuits into 4 pieces.

Step 4 –Place the biscuit pieces in the prepared pan.

Step 5 –In a large bowl, combine the chicken, mushrooms, and 1 cup of peanut sauce.

Step 6 –Spread the chicken mixture over the biscuits.

Step 7 –Top the chicken mixture with 1 cup of cheese, the red peppers, the carrots, and the green onion.
