Once upon a time, this salad had a different name, a much longer one that no one could remember. People would just ask for “that good salad,” and eventually that name stuck. Honestly, it’s a fitting name: That Good Salad has all the best parts of salad, including the crunchy croutons from Ceasar salads and the fatty, salty bacon from all your favorite salads ever. Some creamy Swiss cheese, some nutty toasted almonds, a few juicy tomatoes… mmm, you can just taste the vibrance and energy already. That Good Salad is also good for the schedule and for new home chefs since it’s quick and easy to make. Just be ready to have the recipe ready to share, since everyone will be asking you about that good salad!
Ingredients
- 3/4 cup canola oil
- 1/4 cup lemon juice
- 2 cloves garlic, minced
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 2 (1-pound) bunches of romaine, torn
- 2 cups tomatoes, chopped
- 1 cup Swiss cheese, shredded
- 2/3 cup almonds, optional, slivered and toasted
- 1/2 cup parmesan cheese, grated
- 8 bacon strips, cooked and crumbled
- 1 cup Caesar salad croutons
Directions
Step 1 –In a jar with a tight-fitting lid, combine the oil, lemon juice, garlic, salt, and pepper, covering the jar and shaking well.
Step 2 –Chill the dressing.
Step 3 –In a large serving bowl, toss the romaine, tomatoes, Swiss cheese, almonds, parmesan, and bacon.
Step 4 –Shake the dressing and pour it over the salad, tossing it to combine.
Step 5 –Add the croutons.
Step 6 –Serve.
