Ingredients
For the homemade croutons:
- 4 cups bread, cut into cubes (about 4 medium slices)
- 2 tablespoons olive oil
- 1/2 teaspoon kosher salt
- 1/2 teaspoon garlic powder
- fresh ground black pepper
For the Caesar dressing:
- 1 medium clove garlic, minced or grated
- 1/4 cup parmesan cheese, grated
- 2 tablespoons lemon juice
- 1/4 cup mayonnaise
- 1/2 cup Greek yogurt
- 1 tablespoon olive oil
- 1/2 tablespoon Dijon mustard
- 1 teaspoon anchovy paste or Worcestershire sauce, optional
- 1/4 teaspoon kosher salt
- 1/4 teaspoon fresh ground black pepper
For the salad:
- 3 romaine hearts (or 1 large head romaine)
- 1/2 cup parmesan cheese shavings
Directions
Step 1 –Preheat the oven to 300 degrees F.
Step 2 –Place the bread cubes in a medium bowl.
Step 3 –Toss the bread cubes with the olive oil, the kosher salt, the garlic powder, and the black pepper.
Step 4 –Line a baking sheet with parchment paper.
Step 5 –Place the bread cubes on the prepared baking sheet and bake until evenly golden brown and crisp, about 15 minutes.
Step 6 –Allow the croutons to cool for 5-10 minutes, which lets them crisp up fully.
Step 7 –Place the garlic, the grated parmesan cheese, the lemon juice, the mayonnaise, the Greek yogurt, the olive oil, the Dijon mustard, the anchovy paste, the salt, and the pepper in a bowl and whisk together.
