Ingredients
- 1/2 cup brown sugar
- 1/2 cup honey, plus more, to taste
- 1 teaspoon vanilla extract
- 1/4 cup avocado oil or coconut oil
- 1/2 teaspoon salt
- 3 cups old-fashioned oats
- 3/4 cup unsweetened coconut, shredded
- 3/4 cup almonds, chopped
- yogurt, optional, to taste, for serving
Directions
Step 1 –Preheat the oven to 350 degrees F.
Step 2 –In a large bowl, whisk the brown sugar, 1/2 cup of the honey, the vanilla, the oil, and the salt together.
Step 3 –Add the oats to the brown sugar mixture and stir.
Step 4 –Add the coconut and the chopped almonds to the oat mixture.
Step 5 –Add more of the honey to the granola mixture until it reaches a sticky consistency.
Step 6 –Coat a baking sheet with cooking spray, then immediately spread the granola onto it.
Step 7 –Bake the granola, stirring every 7-10 minutes, until it is crisp and golden, about 20-30 minutes.
Step 8 –Transfer the baking sheet from the oven and let the granola cool.
Step 9 –Serve the granola over the yogurt.
