Ingredients

For the oatmeal bake:

  • coconut oil or neutral oil, to taste, for greasing a pan
  • 2 cups rolled oats
  • 1/2 cup pecans, optional, chopped
  • 1 teaspoon baking powder
  • 1 1/2 teaspoons cinnamon
  • 1/2 teaspoon allspice
  • 1/2 teaspoon kosher salt
  • 2 very ripe bananas
  • 1 3/4 cups milk, of your choice, dairy or non-dairy
  • 1/4 cup pure maple syrup
  • 1 tablespoon pure vanilla extract

Optional toppings:

  • almond butter, to taste
  • peanut butter, to taste
  • banana slices, to taste

Directions

Step 1 –Preheat the oven to 375 degrees F.

Step 2 –Grease an 8-inch or 9-inch square pan with the coconut oil.

Step 3 –In a medium bowl, mix together the rolled oats, the chopped pecans, the baking powder, the cinnamon, the allspice, and the kosher salt.

Step 4 –Transfer the oat mixture into the prepared pan.

Step 5 –Mash the bananas.

Step 6 –In the same bowl, whisk the bananas, the milk, the maple syrup, and the vanilla.

Step 7 –Drizzle the milk mixture over the oats.

Step 8 –Lightly stir the oats and the banana mixture together to make sure everything gets evenly incorporated.

Step 9 –Bake until the top is nicely golden and the oat mixture is set, about 40-45 minutes.

Step 10 –Allow the oat mixture to cool for at least 10 minutes.

Step 11 –Spread the top of the bake with the almond butter and/or the peanut butter.

Step 12 –Top with the banana slices.

Step 13 –Slice and serve.
