Ingredients

  • 2 teaspoons canola oil
  • 1/2 small red onion, diced
  • 1 red bell pepper, seeded and diced
  • 1 cup canned black beans, drained and rinsed
  • 1/4 teaspoon chili flakes
  • salt, to taste
  • pepper, to taste
  • 4 eggs
  • 4 egg whites
  • 1/3 cup Pepper Jack cheese, shredded
  • 4 (10-inch) whole wheat tortillas
  • 1/4 cup reduced fat-free sour cream or 2 % plain Greek yogurt
  • 1/4 cup salsa
  • 1 large tomato, seeded and diced
  • 1 small avocado, cubed
  • hot sauce, to taste

Directions

Step 1 –In a large nonstick skillet over medium-high heat, warm the oil.

Step 2 –Add the onions and the peppers to the oil and cook until the onions are softened and the peppers are slightly charred, about 8 minutes.

Step 3 –Add the black beans and the red pepper flakes to the veggie mixture and cook until warmed through, about 3 minutes.

Step 4 –Season the veggie mixture with the salt and the pepper.

Step 5 –Transfer the veggie mixture to a bowl.

Step 6 –In another bowl, whisk the eggs and the egg whites together.

Step 7 –Stir the cheese into the egg mixture.

Step 8 –Spray the same skillet with cooking spray and place on the stove-top over medium heat.

Step 9 –Lower the heat to low and add the egg mixtures, scrambling until cooked through, about 3 minutes.

Step 10 –Spread each of the tortillas with 1 tablespoon of sour cream, 1/4 of the salsa, 1/4 of the veggie and bean mixture, 1/4 of the egg mixture, a sprinkle of the tomatoes, and 1/4 of the avocado.

Step 11 –Drizzle the burrito filling with the hot sauce.

Step 12 –Roll the filled tortillas up burrito-style.

Step 13 –Serve.
