Ingredients

  • 2 chicken breasts, boneless and skinless
  • 1 teaspoon ground coriander
  • 1 teaspoon dried oregano
  • kosher salt, to taste
  • freshly ground black pepper, to taste
  • 5 tablespoons extra-virgin olive oil
  • 4 tablespoons red wine vinegar
  • 1 tablespoon fresh parsley, chopped
  • 4 romaine hearts, chopped
  • 3 Persian cucumbers, thinly sliced
  • 1 cup grape or cherry tomatoes, halved
  • 2 avocados, sliced
  • 4 ounces feta, crumbled
  • 1/2 cup kalamata olives, pitted and halved

Directions

Step 1 –Preheat the grill to medium-high heat.

Step 2 –Season the chicken with the coriander, the oregano, the salt, and the pepper.

Step 3 –Grill the chicken, covered, turning halfway through, until slightly charred and the thickest part of the meat reaches 165 degrees F, about 18-22 minutes.

Step 4 –Let the cooked chicken rest for 5 minutes, then slice it into strips.

Step 5 –While the chicken is cooking, in a small bowl, whisk the olive oil, the red wine vinegar, and the parsley and season with the salt and the pepper.

Step 6 –Among 4 serving bowls, divide the lettuce, the cucumbers, the avocado, the feta, and the olives.

Step 7 –Top the salad with the sliced chicken and drizzle with the dressing.

Step 8 –Serve.
