Ingredients
For the casserole:
- 2 cups tortilla chips, broken into large pieces
- 1 cup canned corn, drained
- 1 (15-ounce) can black beans, drained and rinsed
- 3 cups chicken breast, cooked and diced
- 2 cups Mexican-style cheese, shredded
- 3 cups salsa
- 1 bunch scallions, sliced
- 2 tablespoons taco seasoning, plus more, to taste
Optional, for serving:
- sour cream, to taste
- avocado slices, to taste
- fresh tomato, to taste, chopped
Directions
Step 1 –Preheat the oven to 400 degrees F.
Step 2 –In a large bowl, add the tortilla chips, the corn, the black beans, the chicken, the cheese, the salsa, the scallions, and 2 tablespoons of the taco seasoning and stir very well to combine, taking care not to crush the tortilla chips too much.
Step 3 –Taste the mixture and add the extra taco seasoning if needed.
Step 4 –Pour the mixture into a 9×13-inch casserole dish and cover it tightly with aluminum foil.
Step 5 –Bake the mixture until bubbly and golden on top, about 30 minutes.
Step 6 –Serve with the sour cream, the avocado slices, and the chopped tomatoes.
