You’re so lucky to have your friend Trisha, with all her go-to recipes for leftovers; she’s such a clutch friend to have! Only half an hour separates you from the delicious flavors of Trisha’s Turkey Surprise Soup! That’s nothing! You can do that with ease… the same ease you’ll feel when diving into the rich, herbaceous broth with notes of cream and bright lemon. This is an excellent way to use lots of leftover turkey in a hurry, and you’ll be hurrying to make more of Trisha’s Turkey Surprise Soup once you’ve made the first batch!
Ingredients
- 2 cups turkey, cooked and diced
- 2 cups long grain rice, cooked
- 1 (10.5-ounce) can condensed cream of chicken soup, undiluted
- 1/4 teaspoon pepper
- 6 cups chicken broth, divided
- 2 tablespoons cornstarch
- 1/4 cup lemon juice
- 1/4 cup fresh cilantro, minced
Directions
Step 1 –In a large saucepan over medium-high heat, add the turkey, the rice, the cream of chicken soup, the pepper, and 5 1/2 cups of the broth and bring the mixture to a boil.
Step 2 –Boil the turkey mixture for 3 minutes.
Step 3 –In a small bowl, add the cornstarch and the remaining broth and stir until smooth.
Step 4 –Gradually stir the slurry into the soup.
Step 5 –Bring to a boil and cook, while stirring, until thickened, about 1-2 minutes.
Step 6 –Transfer the saucepan from the heat and stir in the lemon juice and the cilantro.
Step 7 –Serve.
