Ingredients
- 1/4 cup olive oil
- 2 tablespoons lime juice
- 1 tablespoon fresh cilantro, minced
- 2 cloves garlic, minced
- 1/2 teaspoon coarse salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon paprika
- 1/4 teaspoon chili powder
- red chili pepper flakes, to taste
- 1 pound jumbo shrimp, peeled and deveined
- 1/2 fresh pineapple, cored and halved, thinly sliced
Directions
Step 1 -Preheat a grill to medium heat.
Step 2 -In a large bowl or a large resealable plastic bag, add the olive oil, the lime juice, the cilantro, the garlic, the salt, the pepper, the paprika, the chili powder, and the red pepper flakes.
Step 3 -Add the shrimp and toss until coated.
Step 4 -Cover the bowl or seal the bag and allow to marinate for at least 30 minutes.
Step 5 -Soak eight wooden kabob skewers in water for at least 30 minutes.
Step 6 -Transfer the shrimp from the marinade, shaking off any excess and reserving the remaining marinade.
Step 7 -Thread the shrimp and the pineapple onto the soaked skewers.
Step 8 -Place the skewers on the grill and brush with the reserved marinade.
Step 9 -Cover and cook, flipping and brushing with the marinade halfway through until the shrimp is pink and cooked through at 145 degrees F, about 2-3 minutes per side.
Step 10 -Serve.
