The dressing, with its smokey, sweet barbeque sauce and bright lemon juice, also adds a twist of sour and tang to an otherwise straightforward arrangement of succulent bacon, savory chicken, and crisp salad greens! Ingredients
- 1/2 cup mayonnaise
- 4 tablespoons barbeque sauce
- 2 tablespoons onion, finely chopped
- 1 tablespoon lemon juice
- 1/4 teaspoon pepper
- 8 cups salad greens, torn
- 2 large tomatoes, chopped
- 1 1/2 pounds chicken breasts, boneless and skinless, cooked and cubed
- 10 bacon strips, cooked and crumbled
- 2 large eggs, hard-boiled and sliced
Directions
Step 1 –In a small bowl, combine the mayo, the barbeque sauce, the onion, the lemon juice, and the pepper together; refrigerate the dressing, covered, until ready to serve.
Step 2 –Place the salad greens in a large bowl and sprinkle them with the tomatoes, the chicken, and the bacon.
Step 3 –Garnish the salad mixture with the eggs and drizzle with the dressing.
Step 4 –Serve.
