Ingredients
- 1 cup jarred marinara sauce
- 2 medium zucchinis, chopped
- 4 fillets cod (about 1 1/2 pounds)
- salt, to taste
- pepper, to taste
- 1 tablespoon olive oil
- 2 cloves garlic, chopped
- 1/4 teaspoon crushed red pepper
- 1 pound fresh spinach
- whole-wheat dinner rolls, optional, to taste, for serving

Directions
Step 1 –In a skillet over medium heat, add the marinara sauce and the zucchini and bring the mixture to a simmer.
Step 2 –Season the cod fillets with the salt and the pepper on both sides.
Step 3 –Add the fillets to the sauce, cover the skillet, and cook until the fillets are just opaque throughout and reach an internal temperature of 145 degrees F, about 7 minutes.
Step 4 –While the cod cooks, in a 5-quart pot over medium heat, add the olive oil.
Step 5 –Add the garlic and the crushed red pepper to the hot oil and cook, while stirring, until fragrant, about 1 minute.

Step 6 –Add the spinach and the salt to the garlic-crushed red pepper mixture.
Step 7 –Cover the pot and cook, while stirring occasionally, until the spinach has wilted, about 5 minutes.
Step 8 –Plate the cod fillets with the zucchini and the sauce.
Step 9 –Serve with the spinach and the whole-wheat rolls.
